Although delicata squash is technically a summer squash, it is often classified with winter squash because it is harvested later in the season and can thrive in colder temperatures. It has a characteristically delicate rind that makes this squash tend to have a shorter storage period than other squash. Delicata is commonly baked, but you can sauté it or roast it as well. It is often compared to butternut squash because of its nutty and full flavors! The seeds of the squash are also commonly eaten (and they taste like pumpkin seeds!)Uses: Pair with our brussels sprouts, scallions, mint, and parsley in this delicious squash-salad recipe! You can add a protein too, like our fresh sausage or sage sausage. You could also slice some pork chop or steak on top too!

A.T. Buzby Farm is a family farm in rural Salem County, New Jersey. Andrew and Dawn Buzby established the farm in 1981 as a labor of love. This love continues today and has spread to other friends and family who now help on the farm. They're dedicated to producing safe, healthy food in a way that is sustainable environmentally, financially, and socially.

This squash does not need to be refrigerated but does not have as long of a shelf life as other squash. Best when consumed within a week of purchase.
